Quinoa, Feta & Almond Salad


Love fresh and healthy but crave hearty flavors? Calling all vegetarians and veggie lovers! This salad is so satisfying and I am in love with it. It is SO EASY to make and the only element that requires cooking is the quinoa! I made this last weekend meal prepping for the week and had this for lunch every day at work. A couple of days I topped my salad with some shredded chicken just to mix it up. You can seriously do so much with it and not get tired of eating it! This dish has depth with garbanzo beans, black beans, tomatoes, peppers and purple cabbage. Let me know what you think!
