Gourmet Camping - Shrimp and Grits with a Glass of Bubbly


My husband and I love camping in the San Bernardino mountains. This time of year the weather is absolutely perfect for hiking during the day and getting cozy by the campfire in the chilly evenings. Instead of roasting hot dogs over the fire, we opted to elevate our tent camping experience with a little gourmet cooking. Shrimp and grits is a southern staple, and since I'm originally from Tennessee one would think I'm an expert at making grits, but this was actually my first time to make them! I went with instant grits to cut down on cooking time since I knew we would be super hungry after our hike. The amount of butter and cheese in the grits is really up to your preference. The crispy bacon adds significant depth and not much additional salt is needed.

To compliment the richness of the grits, we paired it with one of our favorite champagnes. We've been saving this bottle of Veuve Cliquot for a few months since we got married, and we decided to share it in the mountains at dinner by the fire.

Side note: I adore these plastic glasses by GOVINO for champagne or wine. They are shatterproof and are great for picnics, boating, camping, etc (govinowine.com). They last a long time if you hand wash them and they have the feel of a real glass.
