Shrimp and Grits

Ingredients:
| Grits - I used quick grits because it was easier for camping and super quick!
| 2 Tbsp Unsalted Butter
| 1 Cup Shredded Sharp Cheddar Cheese
| 1/2 - 3/4 Pound Shrimp Peeled & Deveined
| 5 Pieces Thick Cut Bacon
| 1 Tbsp Fresh Lemon Juice
| 1 Large Garlic Clove Chopped
| 3 Tbsp Fresh Parsley Chopped
| 1/2 Cup Chopped Scallions
Spice Seasoning: Combine spices
| 1 Tsp Cayenne Pepper
| Pinch of Salt & Pepper
| 1 Tsp Ginger Powder
| 1/2 Tsp Red Pepper Flakes
| 1 Tsp Dried Basil
| 1 Tsp Smoked Black Pepper
| 1/2 Tsp Coriander
| 1 Tsp Ground Mustard
Method:
  1. Cook bacon in cast iron skillet (or regular pan) or oven until crispy
  2. While bacon is cooking, begin boiling water for the grits - follow instructions for grits that makes 2-3 servings
  3. Stir in butter & cheese when removing grits from heat
  4. Set aside bacon and chop into chunks
  5. Remove half of grease in pan and sprinkle some of spice blend into pan
  6. Cook shrimp in the bacon grease and generously season the shrimp with spice blend
  7. Cook shrimp until pink, about 4-5 minutes
  8. Add in lemon juice, garlic, scallions, and parsley 
  9. Saute for 2-3 minutes scraping up any bits sticking to pan
  10. Leave some parsley for garnish
  11. Serve grits, top with shrimp and add parsley on top as garnish
  12. Enjoy!
