Gluten Free Chocolate Chip Cookies

Yields about 12 Cookies

Ingredients:

| 5 Tbsp Butter

| 1/2 Cup Brown Sugar

| 1 Egg

| 3 Tsp Almond Milk

| 1/4 Tsp Vanilla

| 3/4 Almond Flour

| 1/4 Cup Coconut Flour

| 1 Tsp Baking Powder

| 1/8 Tsp Salt

| 3 Tbsp Mini Chocolate Chips (Semi-Sweet are recommended)

Tips:

*For best results, let egg and butter sit out on counter and adjust to room temperature before mixing and baking

*Place cookies on a wire rack for cooling. This step is critical in setting up the flavor and texture of the cookies.

Method:

  1. Preheat oven to 400

  2. Combine flours, baking powder, and salt in a bowl. Sift these dry ingredients.

  3. In a separate bowl, beat butter and sugar until color lightens to a light brown.

  4. Add in egg, milk and vanilla and beat until ingredients are completely mixed together.

  5. Slowly add in sifted flour mixture and beat until all ingredients are combined.

  6. Add in the chocolate chips and stir with a spoon until mixed in.

  7. Spoon onto parchment paper on cookie sheet (about 12 cookies).

  8. Bake for 14 minutes or until golden brown.

  9. When removing from oven, immediately place cookies on a wire rack for cooling. They will be soft when moving them, so take extra care when scooping them with a spatula.
