The bun recipe yields 4 buns, so if you are making the bean burger to serve 6 please keep that in mind.
Ingredients:
| 1/4 of Red Bell Pepper
| 1/4 of Yellow Onion
| 2 Green Onions
| 1 Garlic Clove
| 1 Can of Black Beans (15 oz)
| 1 Can of Chickpeas (15 oz)
| 1/2 Cup Breadcrumbs
| 1 Tbsp Soy Sauce
| 1 1/2 Tbsp Worcestershire Sauce
| 1 Egg
| 1 Tbsp Cumin
| 1 Tbsp Chili Powder
| 1/2 Tsp Cayenne Pepper
| 2 Generous Pinches of Salt (Course-ground Kosher Salt)
| 5 or so Cracks of Fresh Cracked Pepper
| 1/2 Tbsp Olive Oil
| 1/2 Tbsp Butter
| Food processor or Ninja
Method:
-
Slice off 1/4 of red pepper and onion and cut into chunks
-
Slice firm end of green onions into small pieces
-
Place in food processor until finely diced
-
Dice garlic clove
-
Combine red pepper and onion mixture with diced garlic into medium sized bowl
-
Drain cans of beans to remove the liquid but do not rinse
-
Add beans to mixture in bowl and mix
-
With a large fork, mash the bean mixture so it forms a paste. Be sure to leave some beans here and there whole or not entirely mashed to add texture
-
Add soy sauce and Worcestershire and mix
-
Add all spices - cumin, chili powder, cayenne, salt, pepper and mix
-
Next, add the egg. With a fork, gently beat to mix the egg and then combine with the bean mixture
-
Add the 1/2 cup of breadcrumbs and mix thoroughly
-
Form mixture into 6 patties
-
Over the top of each patty pour a small amount of soy sauce just to coat the top. Then sprinkle a pinch of salt on each patty.
-
In a large skillet heat the olive oil and butter on med-high heat.
-
Once hot, add the patties and cook each side for about 10 minutes. It's hard to overcook these burgers so if you leave them on a little longer it will just add even more crisp to the outside. If your patties begin to stick or the pan is getting too dry just add a little more oil
-
When cooked, serve with a fresh bun & desired toppings (See my Recipe Here)
